Vanilla Panna Cotta_The Cape Colony PDF Print E-mail



Vanilla Panna cotta
Serves 4-6

400 cream
120mls milk
85g sugar
2 1/4 leaves gelatine  or 7g granules
1 vanilla pod,  seeds scraped and added to milk
lime zest to taste

Bloom gelatine in water
Bring cream, milk with vanilla seeds and lime zest to the simmer and reduce by a 1/3
Add bloomed gelatine
Strain and set into moulds
Refrigerate over night and serve with favourite berries or sorbet
